New Extension Today – NBC4 Partnership Pilot Project Underway

Extension Today is a pilot project and new partnership of NBC4 WCMH-TV, OSU Extension, and CFAES. NBC4 is partnering with OSU Extension and the college to share viewer-focused stories about gardening, cooking, and other tips and resources for improving central Ohioans’ gardens, lives, families, and local communities. A weekly segment will air on Daytime Columbus each Wednesday as well as on Saturday and Sunday mornings. The first two segments covered growing tomatoes and making tomato salsa and street corn. The next segment (to air September 8) will feature tips for tailgate grilling. Welcome OSU Dietetic Intern, Delaney Feighan!

Hello, Everyone!

My name is Delaney Feighan and I am a dietetic intern with The Ohio State University. I am currently doing one of my community rotations with OSU Extension Franklin County’s SNAP-Ed Program. Coming into my internship, I had a strong interest in community nutrition, especially women and children’s nutrition, and my rotation here has only increased that interest!

This week I had the opportunity to join SNAP-Ed Program Assistant, Angie Greene, at the Prairie Township Farmers’ Market to talk to the community about ways to get low-fat and fat-free dairy into their diet. We prepared a Hummus Dip (with chickpeas as a protein base) and a Southwestern Dip (with yogurt as a dairy base) for people to taste-test and vote on their favorite! This was a great opportunity to talk with the community, provide information on our classes, and encourage healthful dairy intake. To my surprise, the southwestern dip won, as I am a huge hummus fan, but the people have spoken!

Say Goodbye to #Quarantine15! 

Our Family and Consumer Sciences Educator Jenny Lobb launched a new partnership with the Hilliard Food Pantry last month. Jenny offered a webinar titled “Say Goodbye to #Quarantine15!” and had 16 individuals affiliated with the pantry register for the class. The week of the webinar, pantry staff assembled and delivered at-home meal kits to eligible registrants who provided an address. The meal kits contained ingredients to make a vegetable frittata from Celebrate Your Plate. A recording of the webinar is available to view HERE. Jenny is looking forward to offering more healthy cooking classes, either virtual or hands-on, for the Hilliard Food Pantry in the future!

 

Sautéed Squash at South Side Family Farms

June 15th was the first class in a series of four Healthy Cooking Classes at South Side Family Farms taught by Dietitian In Your Kitchen’s Julie Palmer and OSU Extension’s SNAP-Ed Program. Julie demonstrated how to sauté summer squash and zucchini picked fresh from the garden. SNAP-Ed Program Coordinator, Danielle Seidita, gave a lesson on the health benefits of squash, the importance of increasing our vegetable consumption, and using MyPlate as a guide for a healthy eating pattern.

The group explored the produce growing at South Side Family Farms and took a closer look at squash blossoms, Swiss chard, and tomatoes. Four families left the class with a reusable tote full of ingredients to recreate the recipe at home, and everyone received a free 2021 Recipe Calendar from SNAP-Ed. Squash and zucchini harvested fresh from South Side Family Farms were available for folks to take home free and enjoy.

We look forward to seeing you at our next class on August 26, 2021, at 8 pm located in the garden at 1269 Wilson Ave. Columbus Ohio. (8/12/21 Class was canceled due to rain. An additional class date TBA for October 2021.) We will be cooking Celebrate Your Plate’s Sloppy Garden Joe’s and exploring the health benefits of peppers and tomatoes. Come taste a healthy, veggie-packed version of a family favorite recipe and join us for an evening of food, friends, and fun! SNAP-Ed Program Coordinator, Danielle Seidita, will join the class with information about MyPlate, increasing the number of vegetables we eat, and tips on making eating healthy easy and fun!

Bring your family and chairs or blankets. There will be food samples and prizes.
