Red Rice

Ingredients

  • 2 cups uncooked long-grain brown rice
  • 6 cups boiling water
  • 1 Tbsp salt
  • 2 onions, diced
  • 1 Tbsp vegetable oil
  • 8 oz tomato sauce, no salt added
  • 6 oz tomato paste
  • 1 Tbsp
  • 2 tsp Worcestershire sauce
  • 1 dash hot sauce

Instructions

  1. Preheat oven to 350°F. Grease a 2-quart baking dish.
  2. Bring the rice, water, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and moist of the liquid has been absorbed, 20 to 25 minutes.
  3. Cook and stir the onions in oil until translucent in a separate pan, 5 to 8 minutes.
  4. Stir in tomato sauce, tomato paste, sugar, Worcestershire sauce, and hot sauce; bring the mixture to a simmer, reduce heat, and simmer for 10 minutes.
  5. Spoon the cooked rice into the prepared baking dish and stir the tomato mixture into the rice until evenly combined.
  6. Cover the dish and bake in the preheated oven for 45 minutes.
