Ingredients
- ⅓ cup yellow onion (chopped)
- ½ lb lean (>90% lean) ground beef or turkey
- 16 oz canned low-sodium tomatoes
- 6 oz tomato paste
- 2 tsp parsley (fresh, optional)
- ⅔ tsp garlic powder (optional)
- 1 cup water
- 1 ¼ cups whole wheat penne pasta (cooked)
- ½ cup low-fat ricotta
- 2 ½ Tbsp parmesan cheese, shredded
Instructions
- Chop onion. Cook onion and ground beef/turkey in a frying pan until meat is thoroughly cooked and onion is tender.
- Drain excess fat from pan.
- Add tomatoes, tomato paste, parsley, water and garlic powder to the beef mixture.
- Bring to a boil and simmer until sauce is thick, about 25 minutes.
- Cook penne pasta according to package directions.
- Add cooked pasta to the beef mixture. Stir to prevent sticking.
- Mix cheeses and drop by spoonfuls into the frying pan. Cover and heat over low heat, about 5 minutes.
- Serve & enjoy!
