Quick Skillet Ziti

Ingredients

  • ⅓ cup yellow onion (chopped)
  • ½ lb lean (>90% lean) ground beef or turkey
  • 16 oz canned low-sodium tomatoes
  • 6 oz tomato paste
  • 2 tsp parsley (fresh, optional)
  • ⅔ tsp garlic powder (optional)
  • 1 cup water
  • 1 ¼ cups whole wheat penne pasta (cooked)
  •  ½ cup low-fat ricotta
  •  2 ½ Tbsp parmesan cheese, shredded

Instructions

  1. Chop onion. Cook onion and ground beef/turkey in a frying pan until meat is thoroughly cooked and onion is tender.
  2. Drain excess fat from pan.
  3. Add tomatoes, tomato paste, parsley, water and garlic powder to the beef mixture.
  4. Bring to a boil and simmer until sauce is thick, about 25 minutes.
  5. Cook penne pasta according to package directions.
  6. Add cooked pasta to the beef mixture. Stir to prevent sticking.
  7. Mix cheeses and drop by spoonfuls into the frying pan. Cover and heat over low heat, about 5 minutes.
  8. Serve & enjoy!
