Power Grain Bowl

Ingredients

  • 2 cups brown rice
  • 12 oz frozen cauliflower rice
  • 16 oz lean ground turkey (>90% lean)
  • 12 oz frozen stir fry vegetables
  • 2 Tbsp vegetable oil
  • 10 Tbsp sweet chili peanut sauce

Instructions

  1. Cook brown rice and cauliflower rice according to their respective package direction. Combine together following cooking.
  2. Preheat oven to 400°F with sheet pan in oven
  3. Coat frozen vegetables in oil, and place on preheated oven. Roast for 20 minutes or until slightly browned.
  4. Preheat skillet on stove over medium heat with oil. Cook ground turkey over medium heat until done.
  5. Place rice into bowls as base and top with ground turkey and roasted vegetables. Drizzle with peanut sauce to serve.
