Ingredients
- 2 cups brown rice
- 12 oz frozen cauliflower rice
- 16 oz lean ground turkey (>90% lean)
- 12 oz frozen stir fry vegetables
- 2 Tbsp vegetable oil
- 10 Tbsp sweet chili peanut sauce
Instructions
- Cook brown rice and cauliflower rice according to their respective package direction. Combine together following cooking.
- Preheat oven to 400°F with sheet pan in oven
- Coat frozen vegetables in oil, and place on preheated oven. Roast for 20 minutes or until slightly browned.
- Preheat skillet on stove over medium heat with oil. Cook ground turkey over medium heat until done.
- Place rice into bowls as base and top with ground turkey and roasted vegetables. Drizzle with peanut sauce to serve.
