Ingredients:
- 1 Tbsp vegetable oil
- 3/4 lb raw chicken breast, cubed
- 4 oz smoked turkey sausage (cooked), chopped into bite size pieces
- 3 cups water
- 1 1/2 cups brown rice, uncooked
- 1/2 cup celery, thinly sliced
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 2-3 tsp Cajun or Creole seasoning, to taste
- 1/4 tsp garlic powder, to taste
- 1/8 tsp hot sauce
- 1 bay leaf
- 14.5 oz canned diced tomatoes
- optional toppings: green onions (scallions)
Instructions:
- In a large skillet lightly coated with 1 Tablespoon vegetable oil, sauté chicken for 2-3 minutes or until chicken is no longer pink. Add in turkey sausage once chicken is cooked.
- Stir in water, brown rice, celery, onion, green pepper, Cajun or Creole seasoning, garlic powder, hot pepper sauce, and bay leaf.
- Bring to a boil.
- Reduce heat; cover and simmer for 50-60 minutes or until heated through.
- Stir in tomatoes; cover and simmer 10 minutes longer or until liquid is absorbed and rice is tender.
- Remove from the heat; let stand for 5 minutes.
- Discard bay leaf.
- Serve with milk and green onions if desired.
