Jambalaya

Ingredients:

  • 1 Tbsp vegetable oil
  • 3/4 lb raw chicken breast, cubed
  • 4 oz smoked turkey sausage (cooked), chopped into bite size pieces
  • 3 cups water
  • 1 1/2 cups brown rice, uncooked
  • 1/2 cup celery, thinly sliced
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 2-3 tsp Cajun or Creole seasoning, to taste
  • 1/4 tsp garlic powder, to taste
  • 1/8 tsp hot sauce
  • 1 bay leaf
  • 14.5 oz canned diced tomatoes
  • optional toppings: green onions (scallions)

Instructions:

  1. In a large skillet lightly coated with 1 Tablespoon vegetable oil, sauté chicken for 2-3 minutes or until chicken is no longer pink. Add in turkey sausage once chicken is cooked.
  2. Stir in water, brown rice, celery, onion, green pepper, Cajun or Creole seasoning, garlic powder, hot pepper sauce, and bay leaf.
  3. Bring to a boil.
  4. Reduce heat; cover and simmer for 50-60 minutes or until heated through.
  5. Stir in tomatoes; cover and simmer 10 minutes longer or until liquid is absorbed and rice is tender.
  6. Remove from the heat; let stand for 5 minutes.
  7. Discard bay leaf.
  8. Serve with milk and green onions if desired.
