Chicken Tortilla Soup

Ingredients

  • 7 oz whole-kernel corn, frozen
  • 7.5 oz black beans (rinsed, drained)
  • 7.5 oz kidney or cannellini beans (rinsed, drained)
  • 7.5 oz low-sodium diced tomatoes
  • 2 oz green chiles (chopped, drained)
  • 7.25 oz low-sodium chicken broth
  • 5 oz low-sodium chunked chicken
  • 5 oz reduced-fat and/or low-sodium cheddar cheese soup
  • 5 slices of crusty, whole-wheat bread (to serve with soup)
  • optional toppings: crushed tortilla chips, shredded low-fat cheddar cheese, diced tomatoes

Instructions

  1. Place all ingredients (except optional toppings) in a crockpot.
  2. Cook on high for 3-4 hours or on low for 6-8 hours.
  3. Serve with crusty bread & toppings.
