Ingredients
- 7 oz whole-kernel corn, frozen
- 7.5 oz black beans (rinsed, drained)
- 7.5 oz kidney or cannellini beans (rinsed, drained)
- 7.5 oz low-sodium diced tomatoes
- 2 oz green chiles (chopped, drained)
- 7.25 oz low-sodium chicken broth
- 5 oz low-sodium chunked chicken
- 5 oz reduced-fat and/or low-sodium cheddar cheese soup
- 5 slices of crusty, whole-wheat bread (to serve with soup)
- optional toppings: crushed tortilla chips, shredded low-fat cheddar cheese, diced tomatoes
Instructions
- Place all ingredients (except optional toppings) in a crockpot.
- Cook on high for 3-4 hours or on low for 6-8 hours.
- Serve with crusty bread & toppings.
