January Foodie Friday – Black Eyed Peas

This month’s Foodie Friday was black eyed peas. Long believed to bring good luck when eaten in the new year, these legumes are also healthy! They are full of great nutrients like magnesium, calcium, and iron and are a great source for fiber. Additionally, black eyed peas are really inexpensive and can go in just about any kind of dish.

Did you enjoy Foodie Friday? Check out the recipe below! This is great on its own or could be great on tacos or as a salsa for chips.

Black Eyed Peas Salad

Ingredients:

  • 2 cans of black eyed peas, drained
  • 1 can of corn, drained
  • 1 cup of cherry tomatoes, quartered
  • 1/2 of a medium onion finely chopped
  • 1 jalapeño, seeded and diced (you can use pickled if out of season)
  • 3 Tbs olive oil
  • 4 Tbs lime juice
  • 2 cloves garlic, minced
  • 1 Tbs cumin
  • salt and pepper to taste
  • 1 avocado, diced

Directions:

  1. combine the first ten ingredients and mix well.
  2. Dice the avocado and gently fold into the mixture
  3. Chill at least 30 minutes

Safety Reminders from the CBO

Theft Prevention

The most frequent campus crime is theft. It’s very important for faculty and staff to lock their office doors, even if you are just “going down the hall for a second”. We continually see thefts from offices and labs where doors were left open, or even shut but not locked. Please make sure to help the college protect its and your valuable assets. For those with ground level windows, please make sure they are closed and locked when you are not in your office or lab. Please make sure to contact the college Dean’s Office immediately upon any theft. Also, please remember if you see something suspicious, say something! University Police non-emergency contact is 614-292-2121 and please also contact the Dean’s Office.

Personal Safety Tips

  • Do not leave tempting valuables visible inside of your parked car.
  • Record serial numbers and descriptions of valuable property.
  • Do not put your address or attach your BuckID to your key ring.
  • Always lock your car.
