The consumer either purchases the saffron spice or honey (See French Artisans) from their local grocery store. The consumer then uses it in their own cooking in a wide variety of dishes. The spice is used in European, North African, and Asian cuisine. Some common examples of dishes with saffron are saffron rice, saffron ice cream, saffron bun, tajine, chermoula, and biryanis. Drinks also are made from the spice for example: saffron tea, chartreuse, strega. Saffron is also used for medicinal purposes. It is said that saffron alleviates cramps and respiratory illnesses. Some traditions also claim aid in insomnia and heart disease. It also is generally believed that saffron can benefit digestion and is consumed following a meal.  Saffron is very important in many cultures; not only for its distinctive taste and color, but also for these medicinal remedies.  It’s use can be seen in many areas where doctors might not be readily available.
