Some of the saffron is purchased by French artisans who make the spice into saffron honey. There are a few different companies in France that make saffron honey but the product is still very rare. Different producers include Bay of Somme and Saffron Spices. These artisans infuse the dried stigmas into Acacia honey. This honey is from the American Acacia tree that only grows in North America and parts of Europe. Acacia honey is very pale in color and has little taste of its own. This makes the honey a prime choice for mixing with spices like saffron. The result of this fusion is a unique blend of flavors that is a rare delicacy. Many of the people that actually grow and produce saffron would not be able to afford such a product.
