The handpicked stigmas are then taken to a nearby laboratory where they are dried. The stigmas are closely examined using many different characteristics to determine quality. Because of the expensive nature of the spice, the International Organization for Standardization (ISO) has introduced an industry standard to verify the authenticity and safety of the spice. The regulations make sure no additional material is added in with the natural product. The ISO testers use standards regarding the color, scent, and flavor of the spice. If the dried stigmas pass the quality test, they are carefully and immediately packaged in light proof metal containers and shipped off site. The ISO is an independent organization that oversees the production of many different products to ensure their quality. This is done so that consumer’s get their money’s worth and the farmers don’t cut corners (“How to Recognize Quality Saffron?”). And since the farms are generally owned by families and not corporations, it is important that they get the right price for their labor. The ISO ensures that what they are producing is of the right quality so that the farmers can be paid accordingly.
