Blueberry-Lemon Energy Balls

You’ll Need:

3/4 cup walnuts

1/2 cup pitted dates

1/4 cup dried blueberries

3/4 cup old-fashioned rolled oats

2 tablespoon pure maple syrup

1 teaspoon grated lemon zest

1 tablespoon lemon juice

Directions:

  1. Process walnuts, dates, and blueberries in a food processor until chopped and combined – about 7 to 10 seconds.
  2. Add oats, maple syrup, and lemon juice.
  3. Continue processing until the mixture is smooth and thick. 20 to 30 seconds.
  4. Transfer the paste to a bowl, add lemon zest, and mix.
  5. Using your hands, form the mixture into 18 small balls.
  6. Refrigerate in an airtight container for up to 2 weeks.
