Zoey’s Cowboy Cous Cous Salad

Today we have a guest recipe from someone in the OCCSS office! Zoey shared with us her Cowboy Cous Cous Salad, an easy, healthy, and customizable recipe! A great bonus about this recipe is it doesn’t need to be reheated, so it’s a perfect on-the-go meal on days you don’t have access to a microwave! 

Makes 5 servings 

Ingredients: 

  • 5 servings of Cous Cous, prepared according to box instructions  
  • Can of corn, drained and rinsed 
  • Can of black beans, drained and rinsed 
  • 1 orange bell pepper, chopped 
  • 1 onion, chopped 
  • 2 cloves of garlic, minced 
  • Cumin, to taste 

Instructions: 

  1. Prepare cous cous according to box 
  2. While cooking, drain and rinse the corn and black beans 
  3. Chop the onion and pepper, mince the garlic 
  4. Once cous cous has been cooked, mix together all the ingredients. Add cumin to taste. 
  5. Separate into 5 servings and store in reusable containers. 

Notes: 

  • Don’t have onion or garlic on hand? Season with garlic powder and onion powder instead! 
  • Add cooked chicken or shrimp if you’re looking for some extra protein 
  • Some other additions you can add to this recipe include olives and green onions
