Today we have a guest recipe from someone in the OCCSS office! Zoey shared with us her Cowboy Cous Cous Salad, an easy, healthy, and customizable recipe! A great bonus about this recipe is it doesn’t need to be reheated, so it’s a perfect on-the-go meal on days you don’t have access to a microwave!
Makes 5 servings
Ingredients:
- 5 servings of Cous Cous, prepared according to box instructions
- Can of corn, drained and rinsed
- Can of black beans, drained and rinsed
- 1 orange bell pepper, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- Cumin, to taste
Instructions:
- Prepare cous cous according to box
- While cooking, drain and rinse the corn and black beans
- Chop the onion and pepper, mince the garlic
- Once cous cous has been cooked, mix together all the ingredients. Add cumin to taste.
- Separate into 5 servings and store in reusable containers.
Notes:
- Don’t have onion or garlic on hand? Season with garlic powder and onion powder instead!
- Add cooked chicken or shrimp if you’re looking for some extra protein
- Some other additions you can add to this recipe include olives and green onions
