After learning more about the sustainability of different meats, I decided to take one of my favorite easy recipes and make it more sustainable by replacing the ground beef with ground turkey. It takes about 10 minutes to prep the meat and the rest of the ingredients are really add-one depending on what you like on your tacos. I have also added a gluten-free variation by using lettuce leaves as taco shells, as well as several ways you can re-use some of the materials.
Ingredients
- 1lb ground turkey
- 1 packet taco seasoning
- Olive oil
- ½ an onion (I use frozen chopped onions, so I never waste any and it keeps for longer!)
- Guacamole
- Salsa
- Shredded Mexican cheese blend
- Sour cream
Recipe (Makes 6-8 tacos)
- Put 2 tbsp of olive oil in a pan and let it heat up. Add the minced turkey to the pan and brown it.
- Add chopped onions and let both the meat and the onions brown.
- Once the meat has browned, add your seasonings to the meat and mix until everything is cooked fully. If the meat looks dry, you can add a ¼ cup of water or some taco sauce to the meat. At this point I recommend tasting your meat, so you can season it to your liking.
- Now you’re done with the meat, it’s time to plate up! You can use corn shells or lettuce shells if you’re gluten-free, just spoon the meat in, add your favorite toppings and you’re good to go.
Re-Using Materials
- I always re-use my salsa jars! Once they’re empty, I wash them out and usually use them as plant pots!
