The first time I tried this salad, I was amazed by how refreshing and savory it tasted. Wild rice salad has a perfect blend of fruitiness from green grapes, orange slices and nutty flavor from wild rice. On top of that, with the variety of colors from all the ingredients, this salad is simply aesthetically pleasant to look at. After looking up the recipe online, I was amazed again, this time by how insanely easy it is to make it myself. I strongly encourage college students to try this recipe not only because it is delicious and healthy, but also because it’s not time-consuming to make, and is for sure budget-friendly 😊

Serving size: 3-4 people
Ingredients:
- 3 cups cooked wild rice, cooled
- 1 cup green grapes, cut in half
- 2 oranges, peeled and sliced
- 1/2 cup scallions, chopped – both green and white parts
- 1/4 cup dried cranberries
- 1 cup pecans
- 1/2 cup orange juice, preferably freshly squeezed (from one to two oranges)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Steps:
- Just simply mix everything and toss them altogether
- You can enjoy it fresh or leave in the fridge for 30 minutes first to let the flavor blend in
