This vegan fried rice is great for students looking to get creative in the kitchen and can be made with a lot of stable ingredients you probably already have around the house. The more uncommon ingredients are super cheap and can be found at any local grocery store.
Makes 4 servings:
Ingredients:
- Rice and vegetables
- 1 package of extra firm tofu
- 1 cup of instant brown rice
- 4 cloves of garlic
- 1 bag of frozen vegetables
- Sauce
- 6 tablespoons of soy sauce (plus more for veggies)
- 2 tablespoons of peanut butter
- 4 tablespoons of brown sugar
- 2 cloves of garlic
- 2 teaspoons of chili garlic sauce
Instructions:
- Preheat oven to 400 degrees F and lightly grease a baking sheet.
- Drain liquid from tofu package. Place tofu between two plates and set a heavy object on top to press out the liquid. Let sit for 20 minutes. After 20 minutes, wrap tofu in a paper towel to soak out remaining liquid.
- After tofu is decently dry, dice into ¼ inch cubes and arrange on baking sheet. Bake for 26- 30 minutes.
- While tofu bakes, prepare both rice and vegetables according to package.
- While rice and tofu are cooking, prepare the sauce. Mix all the ingredients in a medium size bowl and whisk to combine. Taste and adjust flavor according to preference.
- Once tofu is done baking, add it to the bowl with the sauce and let it marinate for 5 minutes.
- Heat a large skillet over medium heat. Once hot, scoop in the tofu. Be sure to leave most of the sauce behind in the bowl. Cook for 3-4 minutes, until golden brown. Remove and set aside.
- In the same hot skillet, add the cooked vegetables and garlic. Sauté for 3-4 minutes and season with soy sauce to taste.
- Add cooked rice, tofu, and remaining sauce to the skillet. Cook for another 3-4 minutes, stirring frequently.
- Separate into 4 servings and store in fridge for up to 4 days. When ready to eat, heat in the microwave for around 1 minute! Feel free to add extra chili garlic sauce or siracha for some added heat.
