Cooking – Seasoning Meats

Something I’m interested in is learning how to season meats. My goal is to season meat so well that I don’t drown my food in sauce like I usually do. I would certainly feel healthier if I can accomplish this. Actually, both of my uncles graduated from culinary school, and the dishes they cook are simply phenomenal. I’m not quite aiming to be at their level, but I think learning to cook with herbs will be a useful skill to have.

 

Here’s a quick video I found of a house (non-professional) chef cooking is own pork chops. He had his own recipe, with spices I don’t particularly care for, but I imagine I can swap out some of the ingredients for an ingredient that I’d like instead.

 

Food Network is a popular TV show with a collection of chefs and their recipes for food. They’ve even got their own website. I’m sure I can find something about seasoning meats here. I haven’t tried any meat recipes from here, but I found a waffle recipe once and prepared it, and my family loved it.

 

A book that I found is called The Cook’s Illustrated Meat Book, and the summary describes having basic to advanced recipes for most meats you can think of. I can preview some of the pages with Amazon here, and it contains a lot of methods for cooking meats, as well as seasonings, and what they recommend. At first glance, I think this is very thorough, and will be useful in my meat-cooking journey.

 

The Ohio State University employs students with Dining Services. Here, if you choose to be a cook, they will teach you how to cook the meat. I know this because I worked with Dining Services temporarily, and was asked what position I was applying for. They told me if I wanted to be a student cook, they would teach me to cook. (But I found dishwashing more fun! XD) I have no idea if anyone outside of the employees would know that via ordinary advertisement, but hey, now you know! Granted, they have their own seasonings that they want the students to use, but it will still give you a basic idea of how to cook the meat, how high to have the heat on, and other important information.
