Graduate Student: Meredith Myers
Meredith’s thesis project was focused on the formulation and characterization of a functional blueberry confection for the treatment of the cognitive decline associated with patients administered chemotherapy. Her project entailed the development of two confections utilizing both blueberry extract as well as lyophilized blueberry powder, and comparing them with regards to thermal properties, storage stability, phytochemical profiles, consumer acceptance, and their pharmacokinetic metabolism in healthy adults.
