Throughout the year, ESRI offers several moocs (plus other classes) to help people learn about more about 21st Century mapping.
“Going Places with Spatial Analysis” is a free 6 week course that introduces the student to the mapping workflow and uses real world examples to walk through topics.

After giving the student limited access, ESRI gives very detailed instructions with screenshots to explain the concepts. The student is encouraged to explore the Map Viewer capabilities and to run the analysis several times during the self guided lessons. Although each lesson has an approximate finish time, students have an entire week to work on it. A certificate is offered upon completion of the course.
