Ingredients:
· 1 pound black beans
· 2 quarts water
· ¼ cup olive oil
· 5-6 cloves garlic – minced
· 2 large sweet onions – finely chopped
· 1 large green pepper – finely chopped
· 1 tablespoon salt
· 1 bay leaf
· 1 teaspoon oregano
· 1 teaspoon ground cumin
· 1 teaspoon black pepper
· Optional: cooked white rice
· Optional: chopped sweet onions for garnish
Preparation:
· Step 1:
Soak beans in water overnight in a large stock pot.
· Step 2:
Using the same liquid that the beans were soaked with, bring beans to a boil in the pot, then simmer.
· Step 3:
In a non-stick pan, heat oil and then add garlic, onion, and peppers. Stir until soft.
· Step 4:
Add mixture to the beans simmering in the pot. Add salt, bay leaf, cumin, oregano, and pepper to the mixture in the pot. Stir, then cover and simmer on medium/low until beans are tender (about 2 hours).
· Step 5:
Remove bay leaf. Serve with rice (optional).
