Ingredients:
· 1 pound ground chuck
· 1 packet taco seasoning (low sodium)
· 1 packet dry ranch dressing mix
· 3, 15 ounce cans of beans (drained and rinsed)
Specific beans can vary. Two options: 1) red and black beans; 2) 2 black beans and 1 great northern bean.
· 1, 15 ounce can of corn (drained)
· 1, 10 ounce can of Rotel diced tomatoes with green chilis
· 2, 14.5 ounce cans of diced tomatoes (Substitution: 1, 28 ounce can of tomato pureE)
· 1, 32 ounce container of chicken broth (low sodium if preferred)
· Options for garnish: sliced green onions, shredded cheese, sour cream or plain yogurt, tortilla strips, sliced jalapenos, avocado, cilantro, guacamole
Preparation:
· Step 1:
Cook the ground beef and season with both the taco and ranch packets.
· Step 2:
Add the beef to a crock pot. Add the remaining canned ingredients (beans, corn, Rotel, tomatoes, broth). Cook on low for 4-6 hours.
· Step 3:
Serve with desired garnish/toppings.
