I am Bhagya Rekha, and I obtained my PhD from the University Cork College in Ireland under Drs. Paul Cotter and Diarmuid Sheehan. I was a visiting scholar in prof Rachel Kopec’s lab. I worked with pink discoloration in cheese. As a part my research I worked with the Kopec group to find the carotenoids in pink defective cheese as well as in Smear ripened cheeses. During my stay here, we developed a method to extract carotenoids from cheese and performed qualitative analyses. Working with Kopec group helped me in understanding techniques like LC-MS and it was great experience to work in such a positive environment.
