Mariona Vendrell-Pacheco is a PhD student in Food Science and Technology at the University of Lleida in Catalonia, Spain. She has experience using Pulsed Electric Field (PEF) as a tool to enhance or stimulate the production of secondary plant metabolites, such as carotenoids or phenolics, in pumpkins, plums, and apples. Her PhD studies are focused on the effects of novel processing technologies (particularly PEF) on the bioaccessibility of tomato juice carotenoids. She visited the Kopec lab in 2017 to compare the effects of multiple novel processing technologies with traditional thermal processing on carotenoid bioaccaccessibility and Caco-2 cell uptake.
