Determinants of High-Fat versus Low-Fat Meat Products Consumption

Using the
Continuing Survey of Food Intake by Individuals (CSFII) 1994-1996 and 1998 data
set, logistic regression analysis was used to predict consumer likelihood to
consume low-fat versus high-fat meat products. The
results indicate that males; residing in the Mid-west, in suburbs, in rural
areas are more likely to consume high-fat meat compared with others. Participants
in the Food Stamp Program, whites, and less educated individuals are more
likely to consume high-fat meat compared with others.
